IQF freezing system (Individual Quick Frozen)

The IQF process enables the deep-freezing of each piece immediately ater the cutting of the meat.
This guarantees the utmost microbiological control and a optimum conservation of the flavour, nutrition and texture of the product, which after freezing is ready to use and mix with other ingredients.

Thanks to this system, the crystals that form inside the cells of the meat are much reduced in size, thus avoiding the rupturing of the walls of the cells. On de-frosting there is no leak of fluids and thus the products conserve all their properties, as if they were just made.
